Chicken Tikka Skewers

Tikka refers to small pieces of meat that are marinated in yogurt and spices, then traditionally cooked in a tandoor, a high-heat clay oven commonly used in Indian cuisine. The yogurt tenderizes the meat, while the spice blend infuses it with deep, layered flavor.

Juicy strips of chicken thighs are marinated in a creamy, spice-forward tikka yogurt sauce, then grilled low and slow until lightly charred and irresistibly smoky. These Chicken Tikka Skewers strike the perfect balance between warmth and depth. Served hot off the grill with warm naan, fresh cilantro, and cooling yogurt on the side.

Prep Time: 15 minutes (plus marinating time)

Cook Time: 20 minutes

Ingredients

  • 2 pounds chicken thighs, cut into strips
  • Chicken tikka marinade (see recipe below)
  • Skewers
  • Warm naan bread, for serving
  • Fresh cilantro leaves, for serving
  • Lemon wedges, for serving
  • Plain yogurt, for serving (optional)

Instructions

Marinate the Chicken

  • Place the chicken strips in a large bowl.
  • Add the marinade and mix until every piece of chicken is evenly coated.
  • Cover and refrigerate overnight, or for at least 2 hours.

Preheat the Wildfire Grill

  • Set to medium-low heat and preheat for 20 minutes.

Form the Skewers

  • Thread the marinated chicken onto skewers, spacing the pieces slightly for even cooking.

Grill the Skewers

  • Place the skewers on the grill.
  • Cook for about 10 minutes per side, turning once, until the chicken is fully cooked and lightly charred.

Serve

  • Remove from the grill and serve immediately with warm naan, fresh cilantro, and lemon wedges.
  • Serve with plain yogurt on the side if desired.

 

Tikka Marinade

Prep Time: 5 minutes

Yield: Enough for 2 pounds of chicken

Ingredients

  • ⅓ cup plain Greek yogurt
  • 2 tablespoons tomato paste
  • 2 teaspoons garam masala (or curry powder)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground ginger
  • ½ teaspoon ground coriander
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 2 tablespoons avocado oil

Instructions

Combine the Marinade

  • In a mixing bowl, add the yogurt, tomato paste, avocado oil, and all the spices.
  • Mix until smooth and fully combined.
  • Use immediately to marinate the chicken
