THE HERBY SIDE SALAD
1 lb Persian Cucumbers – Sliced into ¼ Inch Thick Rounds
1 lb Heirloom Cherry Tomatoes – Halved or Quartered
1 lb Arugula or Coarsely Chopped Romaine
1 Small Bunch Fresh Cilantro – Destemmed & Finely Chopped
1 Small Bunch Fresh Basil – Destemmed & Finely Chopped
1/4 Cup Fresh or Pickled Red Onion – Thinly Sliced
3 Tablespoons Olive Oil – Use the good stuff!
2 Tablespoons Sesame or Szechuan Chili Oil – Optional
2 Tablespoons Aged Black Vinegar or Balsamic Vinegar
Salt & Fresh Ground Pepper – To Taste, as always!
Place all of the produce into a large bowl once it has been cleaned, prepped, and sliced.
Carefully toss your produce with your selected oils and vinegars until fully combined – add salt and pepper to taste.
Serve your Herby Side Salad as soon as you’re finished making it or prep it ahead up to an hour in advance.
