GRILLED BERRY COBBLER
8 SERVINGS
FILLING
1 lb Fresh Berries – Anything in season will work! Think blueberries, blackberries, strawberries, etc.
2 Tablespoons Lemon Juice
1/2 Cup Brown Sugar
2 Tablespoons Cornstarch
1 Teaspoon Ground Cinnamon and/or Ginger (Optional)
1 Pinch of Salt
TOPPING
1/2 Cup Butter
1/2 Teaspoon Salt
1/4 Cup Sugar
2 Cups Flour
2 Teaspoons Baking Powder
2/3 Cup Milk
1 Teaspoon Vanilla Extract
1 Teaspoon Ground Cinnamon and/or Ginger (Optional)
1/4 Cup Raw or Turbinado Sugar – For sprinkling on top
NOTE: Sub in plant-based butter and alternative milk to make this vegan-friendly!
FILLING / STEP 1
Preheat your Wildfire Grill to Medium Heat.
STEP 2
In a large mixing bowl, stir together the Lemon Juice, Brown Sugar, Cornstarch, Spices, and Salt until fully combined.
STEP 3
Gently fold all of the berries into the filling mixture – evenly coating them before transfering to a greased baking dish and setting it aside.
TOPPING / STEP 1
Thoroughly rinse and dry the mixing bowl you used for your filling or grab another one to get started on assembling the topping to finish off the cobbler.
STEP 2
Using your fingertips – gently combine the Butter with the Salt, Sugar, Flour, and Baking Powder until the butter is pea-sized. Add Milk, Vanilla Extract, and Spices – then continue to quickly work the ingredients by hand until a dough forms.
STEP 3
Take small sections of dough – about a handful at a time – and spread over the berry mixture in the baking pan. Leave small spaces around the edges and between sections of the topping – creating a sort of patchwork for steam and juices to rise through.
STEP 4
Sprinkle the cobbler topping with the Raw or Turbinado Sugar prior to baking.
STEP 5
Use your Wildfire Grill to bake the cobbler for about 45 minutes with the lid shut or until the top is golden and the berries have started rapidly bubbling along the edges.
NOTE: Consider placing a baking tray underneath the cobbler to protect your grill from juices that may bubble over the sides of the dish.
STEP 6
Remove the cobbler from your Wildfire Grill and let fully cool prior to serving so the filling has time to stabilize.
STEP 7
Serve with a scoop of vanilla ice cream or whip and enjoy!
